Aubergine and Halloumi Salad
Ingredients
100-200g of mixed greens (I used a mix of Doucette and rampon salad leaves)
1 pack of halloumi (about 200g)
1 Large onion
1 Large aubergine (aboutt 350g)
Salad dressing
Salt and pepper to season
Juice of half a lemon
Olive oil
Balsamic glaze
Aubergine marinade
2 TBSP of olive OIL
1 TSP of salt and pepper to season
3 garlic cloves crushed
Zest and juice of half a large lemon
1 TBSP of soya sauce
1 TSP of paprika
1.5 TSP of dried parsley
METHOD
In a zip lock bag add the olive oil, salt, pepper, garlic, lemon juice and zest, soya sauce, paprika and dried parsley
Thinly slice the aubergine and add to the bag. Shake the bag until all the aubergine is coated in the marinade and leave it in the fridge for at least 2 hours.
On a grill pan or on a bbq grill the aubergine. (Since its thinly cut it will take 5-10 minutes)
Once the aubergine is cooked take it off and let it cool.
Cut up your halloumi and grill it.
In a bowl add your greens and finely chopped onion.
Put some Lemon juice, salt and pepper and drizzle some olive oil on top.
Tope with your aubergine and halloumi.
Drizzle some balsamic glaze over the top.
