Aubergine and Halloumi Salad

Ingredients

  • 100-200g of mixed greens (I used a mix of Doucette and rampon salad leaves)

  • 1 pack of halloumi (about 200g)

  • 1 Large onion

  • 1 Large aubergine (aboutt 350g)

Salad dressing

  • Salt and pepper to season

  • Juice of half a lemon

  • Olive oil

  • Balsamic glaze

Aubergine marinade

  • 2 TBSP of olive OIL

  • 1 TSP of salt and pepper to season

  • 3 garlic cloves crushed

  • Zest and juice of half a large lemon

  • 1 TBSP of soya sauce

  • 1 TSP of paprika

  • 1.5 TSP of dried parsley

METHOD

  • In a zip lock bag add the olive oil, salt, pepper, garlic, lemon juice and zest, soya sauce, paprika and dried parsley

  • Thinly slice the aubergine and add to the bag. Shake the bag until all the aubergine is coated in the marinade and leave it in the fridge for at least 2 hours.

  • On a grill pan or on a bbq grill the aubergine. (Since its thinly cut it will take 5-10 minutes)

  • Once the aubergine is cooked take it off and let it cool.

  • Cut up your halloumi and grill it.

  • In a bowl add your greens and finely chopped onion.

  • Put some Lemon juice, salt and pepper and drizzle some olive oil on top.

  • Tope with your aubergine and halloumi.

  • Drizzle some balsamic glaze over the top.
