Sweet Potatoe Fries
The best sweet potato fries you will ever have…thank you Chrissy Teigen! These are the perfect “indulgent” side to your meal and say indulgent in inverted commas because it is in the grand scheme of things a pretty healthy side dish.
They are the only sweet potato fries that I have managed to make that are actually crispy! My favourite way to have them is with steak and some garlic mushrooms.
Ingredients:
675g of Sweet Potatoes
Salt
Two Egg Whites
Two TBSP of Cornflour
Three TBSP of Olive Oil
Method:
Preheat the oven to 200°C.
Cut up the sweet potatoes into wedges (about 2cm thick lengthways).
Place a piece of parchment paper on a tray and place the olive oil on top. Heat the oil up in the oven for 7 minutes.
Beat up the egg whites until they are stiff.
Fold in the cornflour and salt.
Toss the potatoes in the egg white mixture.
When the oil has been in for 7 minutes, take the tray out and gently lay the potatoes on it (ideally keeping them all separate).
Place them in the oven for 13 minutes.
Take them out and flip them over and put them back in the oven for another 13 minutes.
Serve hot!
