Greek Chicken
Ingredients:
850g Diced Chicken
2 tbsp Olive oil
2 tbsp Oregano
1 tsp Smoked paprika
1 tsp Chopped up dried parsley
1 tsp Chopped up dried or powder coriander
1 tsp Chopped up finely dried Rosemary
1 tsp Chopped up dried Thyme
1 tsp Lemon zest and 2tsp Lemon Juice
1/2 tsp Cayenne peppers
1 tsp Salt
4 garlic cloves crushed
1 small red onion chopped finely
150g quark
Season with black pepper
Method:
1) Dice up the chicken and put it into a zip lock bag
2) Mix all the other ingredients in a bowel
3) Pour marinade over the chicken and let it sit for 3 -5 hours but overnight for more flavour
4) Put the chicken on skewers to cook on the BBQ for 15 minutes. Serve with pitta breads, tzatziki, greek salad and hummus.
