Thai Stuffed Omelette
As we know brunch is one of our favorite things to eat! This weekend we tried these Thai omelette’s and they were too good not to share. Credit where credit is due, I changed a few things but as a whole this recipe came from Pepper Thai’s latest cookbook (which I highly recommend).
This recipe serves 2 and is quick and super nutritious, so you don’t want to miss out on giving it a go!
Ingredients:
For the filling
0.5-1 TBSP of vegetable oil
175 grams of ground porc, beef or chicken. (The usual recipe calls for pork, I used less than 7% fat beef and it was perfect)
1/2 of a small red onion
4 cloves of garlic minced
1/4 cup of thinly sliced green beans
1/4 sweet corn kernels
1 TBSP of oyster sauce
1 TBSP of soy sauce
1 Small plum tomato diced thinly
1 TBSP of tomato past
2 scallions, thinly sliced.
For the Omelette
4 Large eggs
1 TSP of fish sauce
1/2 TSP of sugar
Ground white pepper
Butter for frying
Garnish
Coriander leaves
Scallions
Bread to eat it with
Method
1) Make the filling
In a large pan or skillet, heat the oil over a medium-high heat until shimmering hot. Add your meat of choice, onion and garlic. Cook, stirring until the meat is mostly cooked and onion is softened (about 2-3 minutes). Add the green beans, corn, oyster sauce, soy sauce, tomato and tomato paste and cook until a-lot of the liquid as evaporated and thick sauce starts to form. Remover from the head and stir in the scallions.
2) Make the omelette
In a small bowl, stir in the eggs, fish sauce, sugar and pepper. In a non stick pan, over a medium low heat add the butter. Pour in half the mixture and cover until cooked through. Add in half the mix and fold over like a burrito. Repeat for the second omelette
